Crab and Salmon Fishcakes

    Not a Philippine favourite, but certainly a favourite. I just can't resist anything from the ocean.

    They really take no time at all to prepare, just add your favourite fresh salad and you're good to go


    Ingredients(quantities added only as example):-

    200g potatoes (peeled and cubed)
    200g cooked salmon (flaked)
    200g cooked white crab meat
    100g cooked brown crab meat
    tblsp Parsley (finely chopped)
    tsp Dill (finely chopped)
    1 egg yolk (large free range)
    Plain flour
    Salt & pepper to taste
    Veg oil for frying
    Lemon to serve


    Cooking method:-

    1. Boil the potatoes for about 15 mins until soft. Drain let dry before a good mashing
    2. Add the salmon, the crab,parsley and dill,egg yolk and 1 tblsp flour
    3. Season with salt & pepper and mix together well
    4. Form the mixture into disc patties about 2 cm thick,lightly dust with a little flour.
    5. Put them on a floured sprinkled plate and chill for about 30 mins
    6. Add a couple of tblspns of oil in a frying pan and heat.
    7. Fry the fishcakes for about 3-4 mins each side or until nice and golden brown (make sure hot all through)
    8. Drain on kitchen paper and serve with a slice of lemon (and your salad if wanted)
