I love toasted, buttered crumpets but they're hard to find in the Philippines - the last ones I bought were from The Crusty Loaf in Barretto, Olongapo, now long defunct. I hadn't thought of making them myself because I thought they were baked and, like most homes in the Philippines, mine did not have an oven. They can be made on a stove top if you have a reasonably heavy frying pan. Once cooked they'll keep in a fridge so you can toast them when you need a taste of civilisation. I like to get my crumpet well buttered up. Then spoon some honey over it and forget the calorific count.... juicy and sweet... Tom
