My Filipina Wife Does Low Carb

    Yesterday’s dinner. Beef stew and dumplings and chocolate brownie and cream. All pretty mean on the carbs, very filling and very tasty. I had two dumplings and two bits of brownie.

    Meantime Mrs Ash has shed another 2 kg in the month and heading towards her target weight by June / July

    I made this last night a batch of 7 portions.

    Chicken Curry with Spinach, cooked in Greek yoghurt with a touch of double cream, chillies, garlic and my own custom spice mix, a bag of Spinach leaf wilted down into the mix.

    Calculated total carbs 5 grams.

    And this is one of my Chinese Dishes again made in large batches and portioned for freezing.

    Chicken, Red onion, Water Chestnuts, Bamboo Shoots, Baby Corn, chillies and Mangetout, again very low in carbohydrate, a lot of those ingredients have next to none and the ones that do are divided amongst 6 or more portions.

    I also make this as a late night snack, I don't eat the red onion or at least only a tiny bit of it, they are there to flavour the vinegar a bit.

    Cucumber pickled in Datu Puti cane vinegar.

    Ana used to make this but mine is better.

    Clearly not rice at 5 grams of carbohydrate, 1 gram was in the curry 4 grams in the 'not' rice :D

    edit: in the first picture the 'not rice' is a purchased product the second picture is older and I made that myself, bit messy but easy enough to make.

    Okay. So if you are consuming carbs at those levels you must be in ketosis. And burning fat. You can verify it with ketone sticks if need be. It takes a few days to switch over to fat burning mode. You may recall the guys and girls going without food for a week and running miles. It didn’t take them long to switch to fat burning mode.

    Ok it's cauliflower rice, just finely chopped cauliflower nothing else, about 4 grams carbohydrate per 100 grams of cauliflower :D

    Very hard to get from the shops but Morrisons do a pack of 4x150 gram portions for about £1.75 it is actually very good has almost the right mouthfeel to it, but they are always out of stock.

    The 150 gram portions have about 6 grams carbs.

    I've got what is probably keto flu, my mouth tastes like crap in the morning, and my armpits are fruity smelling so maybe borderline.

    I'm not really low enough to be in ketosis though as I budget about 30 grams carbohydrate a day sometimes I will let that go to 40grams, I like Lindt chocolate I will have a fifth of one of these each day, some days not all, still has a few carbs in it.

    Sometimes go for the 80g 65% version which has a couple more carbs but is more palatable.

    I'm using up stuff I had in the freezer as well, I will have something like this now and then, the batter is about 16 to 20 grams of carbs on this fish and the Tartre sauce adds about 2 grams in the portion size I use, but the Broccoli fills me up and it's easy.

    If I am having something like this I will try to eat as early in the evening as possible and not eat again till the next day.

    Going to switch to doing baked fish fillets with a cheese and spinach sauce I think.

    Aldi do ready chopped packs. I fry it in butter or olive oil. Season it with salt, pepper, a chopped up fresh tomato, garlic and some chopped almonds which give it some crunchiness. By the time I am finished it hardly resembles cauliflower at all.

    Batter can be a bu88er as it can be quite thick.

    The stuff I am using tastes great I just microwave steam it for 3 mins at 1000W, I tried frying and did not really like it.

    It’s amazing what you can do with dark chocolate or unsweetened cocoa powder and some sweetener. Mrs Ash makes chocolate fat bombs with Philadelphia cheese, powdered sweetener and cocoa powder. Tastes delicious. Or you can use melted 85% Lindt chocolate.

    This YouTube video demonstrates change across the country. With T2 diabetes, hypertension, obesity, NAFLD and more. These healthcare professionals might not work too far from any one of this forum’s members. They all tell the same story.

    No, only if someone offers me coffee when I am on site at a customer, I used to accept it in the Philippines but will turn it down now.

    Also don't drink Tea.

    There is a lot of it about.

    Did you have a blood test recently? If so did you get an HbA1c result?
