Ginger Cake

    Ginger Cake

    8oz butter
    8oz caster sugar
    1lb golden syrup
    1 cup milk
    1 cup boiling water with 1 tsp of bicarbonate soda
    1lb self raising flour
    1tsp mixed spice
    1tsp ground ginger

    Rub in the butter and flour until it resembles breadcrumbs, mix in the sugar and spices, add the syrup and the milk and water and mix to a dough. Pour into a tin and bake for: 1 - 11/4 hours at 170 degrees C

    Note.

    This is a big mix and will give you two cakes. We used two tins.

    Do thoroughly mix. You will find it is more of a liquid than a dough.

    And do use greaseproof paper to line the tins as the cake is sticky!

    My wife has made this twice now and it is great!

    I love Ginger cake. Gave some to Joy recently and she wasn't too pleased with it.. :(

    :D Now, my wife is quite fussy and isnt that keen on UK food. But she does like ginger cake.
